It’s well established that there are five senses of taste; salty, sweet, sour, bitter, and umami, the last one added in 2009. Now it’s believed that there may be a sixth sense of taste that’s missing from the list – complex starchy carbohydrates. Since enzymes in saliva break down complex carbs like starches into their component simple sugars, it was thought that we detect starches by tasting their sweet by products. Now it seems that we are able to detect a “starchy” taste in long and short carbohydrate polymers.
